The Carolina variety is a relatively new entrant to the heat scale. It first appeared on the top ten list in 2013 and the heat rating was increased in the 2019 list. The artificially created pepper is a cross between a red Ghost Pepper and the Red Habanero and was grown in South Carolina by Ed Currie. The SHU average rating for the top pepper is listed as 1,641,000.

A spokesperson for the blog and website explained, "You can explore our blog to learn more about the world's hottest peppers. New varieties are constantly being developed, but the Carolina Reaper currently holds the record recognized by the Guinness World Records organization. The Scoville heat scale was originally developed by Wilbur Scoville and has been the accepted method to measure the heat in hot peppers for over a century."

Some of the other pepper varieties which are included in the blog include Ghost Peppers, Trinidad Scorpion and the ever-popular Habanero. The full 2019 list of the world's hottest peppers can be found as a blog article along with a description of how the Scoville Scale rating is achieved.

Additional information about peppers includes how they are grown, where their range is, planting instructions and taste. The recipes cover a range of foods from vegetables to poultry, seafood, and even wild game. There are explanations about how to best handle peppers when using them in a recipe.
