The two key standards for oil chemical analysis are acidity and peroxides. Acidity determines the sale category of the oil.  Peroxides indicate the level of oil preservation and rancidity. If the number of peroxides present in any given oil is low, it means that specific oil is of high quality. Organoleptic characteristics of quality oils will dictate whether the oils will come off as bitter, harmonious, sweet, fresh, fruity, intensely fruity, mature, soft, spicy, full, or lively.
