Bohemia, NY / http://www.myprgenie.com/ / via ACCESSWIRE / March 31, 2014 / Flavor Your Life, a European Union funded campaign that is dedicated to providing the latest in olive oil news, shares a recipe for slightly sweet Savory Olive Oil and Herb Biscotti prepared with organic olive oil, which makes a perfect pair with wine and fine cheeses.

Ingredients needed for this recipe include:
1-1/2 cups all-purpose flour
1/2 cup fine cornmeal
2 tsp. baking powder
1/2 cup grated Parmesan cheese
1/2 cup chopped, toasted walnuts nuts (or hazel nuts)
2 tsp. fresh, coarsely ground black pepper
2 tsp. fresh rosemary, finely chopped
1/2 tsp. fresh thyme
1/4 tsp. garlic powder
2 large eggs, at room temperature
1/2 cup sugar
1/3 cup organic olive oil

First, preheat the oven to 350degF. Line a large, rimmed baking sheet with parchment paper, a non-stick baking mat, or spray lightly with non-stick cooking spray. In a large bowl, sift together flour, corn meal, and baking powder. Stir in Parmesan, walnuts, pepper, rosemary, thyme, and garlic powder, mixing until well blended.  In a medium bowl, whisk together eggs, sugar, and oil until well combined. Stir wet ingredients into dry ingredients to form the dough. Place onto a lightly floured surface and shape into two 11-inch x 1-1/2-inch logs. Transfer logs to prepared baking sheet. Gently press to slightly flatten the top surface of each log. Then bake the logs for 20-25 minutes or until lightly golden. Cool on a baking sheet for 13-15 minutes.

Reduce oven temperature to 300degF. Carefully transfer logs to a cutting board. Using a serrated knife, slice each log crosswise on a slight diagonal into 1/2-inch-thick slices. Place the slices, cut-side down, in a single layer on the baking sheet. Bake for 10-12 minutes, then remove from the oven, carefully flip over each slice, and continue to bake 10-12 minutes or until cut surfaces of biscotti begin to turn golden brown. Cool on a baking sheet for 5 minutes, then transfer biscotti to a wire rack and cool completely.
