Bohemia, NY / http://www.myprgenie.com / via ACCESSWIRE / March 28, 2014 / Flavor Your Life, a European Union funded campaign that is dedicated to providing the latest in olive oil news, shares a recipe for traditional Sicilian Style Pasta prepared with Italian herbs and Italian olive oil.  In addition to a full, authentic Italian flavor, the Italian olive oil used in the recipe also offers many health benefits.  This recipe is perfect for a quiet date night in, or it can be adjusted for a larger family dinner.

This recipe calls for the following ingredients:

8 oz spaghetti

9 oz peeled tomatoes

1 Small Eggplant

1 pepper

1 clove of garlic

2 black olives

0.35 oz capers

5 basil leaves

2 anchovies

Pepper and salt to taste

Italian olive oil

First, chop the tomatoes into small pieces.Then, cut the eggplant into cubes.  Remove the skin of the pepper and cut it into julienne-style strips.  Clean the anchovies, then chop and mince the clove of garlic.  Warm up one to two tablespoons of Italian olive oil in a pan and add the tomatoes, eggplant, pepper, and the pitted black olives.  Add the capers, the cleaned anchovies, and the whole clove of garlic.  Flavor to taste with basil. Add a pinch of salt. Put the lid on and cook on a low flame for about 20 minutes.  Cook the spaghetti.  Once the spaghetti has been drained, add the sauce, spice with pepper, and serve.
