From the chefs at Yellowbird comes a recipe for having yourself a Habanero holiday with a Habanero-infused Turkey:

Ingredients:

1 large turkey
• Kosher salt
• pepper
• 1 can Austin Beerworks Black Thunder (or dark beer of choice)
• ½ cup of molasses
• 2 tablespoons coconut oil
• ¼ cup Yellowbird Habanero Sauce

INSTRUCTIONS

  1. Preheat oven to 250º.
  2. Mix equal parts salt and pepper in a bowl and rub over thawed turkey, ensuring full, but not excessive coverage. Place turkey in oven and cook for one hour.
  3. While turkey is roasting, add beer, molasses, coconut oil, and Yellowbird Habanero Sauce to a sauce pan over medium heat and stir until fully combined. Remove from heat.
  4. After turkey has cooked for one hour, pour baste mixture over the entire turkey and continue cooking for remaining time or until turkey is fully cooked. Remember to baste the turkey every hour with liquids from the bottom of the roasting pan.

Ingredients:

Shredded leftover Thanksgiving turkey (light and dark meat both work!)
Whole lettuce pieces (Romaine, Butter Lettuce, Iceberg, etc. all work well)
Yellowbird Jalapeño Sauce

Equal parts:

Chopped carrots
Thinly sliced celery
Chopped green onions
Basil aioli:
1 cup mayo, sour cream or Greek yogurt
1/4 cup basil, packed
1/4 cup cilantro, packed
3 tablespoons fresh lemon juice
1 teaspoon salt

Instructions:

  1. Combine the shredded turkey with the basil aioli, chopped celery and carrots and half the green onions. Stir until well combined.
  2. Place the turkey into the lettuce pieces and top with more green onions and Yellowbird Jalapeño sauce!

For an exceptional holiday side dish, try the Yellow Bird Sweet and Spicy Brussel Sprouts:

Ingredients:

4 cups brussels sprouts halved
½ cup Yellowbird® Jalapeño Condiment
½ cup local honey or maple syrup
2 tablespoons EVOO
salt to taste

Instructions:

  1. Coat large sauté pan with olive oil and place over medium heat. Add halved brussels sprouts and sauté until golden brown and edges are crispy, stirring occasionally.
  2. Combine Yellowbird Jalapeño Condiment and honey or maple syrup in a small mixing bowl. Drizzle over sautéed brussels. Salt to taste and serve.
